This Chenin blanc is produced from 31 year old dryland vines grown in the Polkadraai region in Stellenbosch. This particular sight enjoys cooling sea breezes during those hot Stellenbosch afternoons. We picked these grapes around 21 Brix to retain a freshness in the wine. After whole-bunch pressing the juice was racked to old puncheon barrels where a combination of natural and commercial yeasts were used for fermentation. Having spent 7 months on gross lees, we bottled without fining or filtration, yielding a total of 1247 bottles.
